Wild Leeks/Ramps (Allium Tricoccum)

The most exciting time around our home during the early stages of spring (besides watching the snow recede) is eagerly watching out for wild leeks. I tell ya, nothing gets the guys out into the bush faster around here then Leeks! It’s interesting from a female perspective to watch these rough and tumble guys excitedly scrambling around the bush gently digging up these fragile plants that are oooooohhhhhh so good. The flavour these little guys pack are unbelievable! It’s like a mild onion and garlic combined. I personally love it in soups or sautéed with fresh garden veggies or mushrooms, oooh ya that drizzled over a nice steak – yum! You could even chop up the leaves and add it to your salads.
